General Manager
Henry Allsop ‘blew-in’ at the start of 2023 from Somerset. Originally from London and with over 20 years experience in hospitality, but with a love of all things rural, a passion for crafts and in particular food and drink, he has found a very happy home with us here in the Slad Valley.
Owner
Having grown up within walking distance across from the Slad Valley, in a neighbouring valley, Daniel bought The Woolpack freehold in 1999. Over the past 24 years, he has endeavoured to preserve the timeless spirit & warmth of the pub & its interior.
Head Chef
Adam Glover joined as head chef in 2013. His weekly changing menu is led by seasonal ingredients, with vegetables and flowers from the kitchen gardens at Lypiatt Park. Driven by his suppliers produce, the menu is concise and perfectly formed, allowing the quality of the ingredients to speak for themselves.

Laurie Lee was an English poet and writer, celebrated for his internationally acclaimed childhood memoir, ‘Cider with Rosie’. Lee was a regular visitor to his local pub and referred to it with great affection. He is buried in the Slad Churchyard and a walker’s route around the village of Slad is dedicated to him by name.
The Woolpack is the proud custodian of the Laurie Lee beer bottle collection and a cabinet dedicated to his written works, as part of our tiny book shop.
Watch a short clip of Laurie in his corner of The Wooly in 1994, the year of his 80th birthday.
Sign up to our newsletter to receive occasional updates from the bar and kitchen and news of upcoming events.
The Vegetable garden at Lypiatt is set within the original Victorian walled Garden. It includes green houses and a poly tunnel, meaning there is almost always something to bring the pub through the year. The vegetable garden was managed by Eva Chadwick from the mid-sixties until the early 2000s, when she passed the responsibility on to Juliet Chadwick. The gardens have been supplying the Woolpack since 2019.
Maddy McLeod is the head vegetable grower. Produce is delivered twice a week, from late Spring to early Autumn, when it gradually slows down. During the summer months, students/ apprentices also come to learn and help. Tiger Chadwick is part-time all year round.
Maddy uses a combination of the ‘No Dig’ method and traditional growing methods. Although we are not certified organic, no chemicals are used, there is no spraying and the seeds are almost always organic and heritage varieties.
Harvest days are Tuesday and Friday. Whenever possible, a member of staff comes to join Maddy in the gardens at 8:30am on these days, to help with the harvest and deliver the produce to the pub, before continuing with their shift.
We are always excited to meet waiting staff, bartenders, cooks & kitchen staff. We are a community of passionate & enthusiastic individuals committed to creating a great working environment and to eating & drinking well.
If you have a desire to join a diverse community in a unique neighbourhood setting & enjoy looking after people then please do consider joining us and get in touch detailing your position of interest.
